Cheesy Mexican Cauli Rice

The more cheese the better, in my opinion. While this has a lot of cheese, it's also super packed with things that are good for you. The cheese is concentrated on top, the rest is veggies, chicken, and beans. I took a lot shortcuts for this one, partially because it's easier, and partially because we needed ingredients that would keep. Since we're shopping once a week, and this was the last meal we planned for, having things like fresh cauliflower (instead of pre-riced frozen cauliflower) and raw chicken (instead of pre-cooked chicken) is less ideal, since they'd go bad. Also, not to deny, it's a bunch easier to get frozen pre-riced cauliflower than rice your own, etc.

So this is another chop and bunch of stuff, put it in a skillet, and cook. Mildly time consuming in the chopping, but an easy dish overall. It was also quite tasty. We used only cheddar cheese (we find it more flavorful than monterey jack), skipped the jalapeno so baby could have some, and skipped cilantro because it's the devil. Husband disagrees, but my cooking, my rules.

We also doubled the recipe. Due to the situation, we're freezing a lot of food. In case food shopping gets harder, we'll have a supply. If either or all of us get sick and have to quarantine, we'll have available pre-made food...not just so we don't have to go out and buy more food, but if we're so sick we can't make anything, we have something easy to do. It's a scary world out there.
